Red Beans with Rice Recipe – Easy & Nutritious Meal

Red beans with rice is a comforting and wholesome dish that combines rich flavors with simple ingredients. It’s a perfect everyday meal for the whole family, packed with protein, fiber, and energy.



Ingredients:

  • 1 cup red beans, soaked overnight
  • 1 medium onion
  • 2 garlic cloves, crushed
  • 2 medium tomatoes
  • 1 tbsp tomato paste
  • Seven spices, salt, cumin, chili (optional)
  • 1 cup rice, soaked for 30 minutes
  • Oil
  • Ghee for the rice

Method: 

Cooking the Beans

  • Cook the soaked beans in a pressure cooker for about 15 minutes (or longer in a regular pot).
  • Drain the cooking water and rinse the beans (to avoid bloating).


Preparing the Sauce: 

  • Heat oil in a pot, sauté the chopped onion until soft.
  • Add crushed garlic and stir until fragrant.
  • Add chopped tomatoes and let them cook down until softened.
  • Mix tomato paste with a little water, add it in, and simmer until thickened.
  • Add the beans, spices, and finally salt.
  • Cover with water, close the pot, and let simmer gently for a couple of boils.


Cooking the Rice

  • Heat ghee and oil in a pot.
  • Add the soaked and drained rice.
  • Season with salt.
  • For every 1 cup of rice, add 2 cups of water.
  • Let the water evaporate until small holes appear on the surface.
  • Cover the pot, reduce the heat to very low, and steam until the rice is fluffy and fully cooked.


Tip: For extra flavor, cook the beans with meat and use the broth instead of water.
